{"id":4147,"date":"2013-01-22T05:00:41","date_gmt":"2013-01-22T11:00:41","guid":{"rendered":"http:\/\/www.crumbbums.com\/?p=4147"},"modified":"2013-07-29T19:43:34","modified_gmt":"2013-07-30T00:43:34","slug":"yummy-stuff-spinach-stuffed-crispy-baked-chicken","status":"publish","type":"post","link":"https:\/\/www.crumbbums.com\/?p=4147","title":{"rendered":"Yummy Stuff: Spinach-Stuffed Crispy Baked Chicken"},"content":{"rendered":"<p><img decoding=\"async\" alt=\"DSC_0015\" src=\"http:\/\/farm9.static.flickr.com\/8378\/8381492025_c48e6f6ae9_b.jpg\" \/><\/p>\n<p>Today I want to share a recipe that was inspired by my own mama&#8217;s Chicken Florentine that has all the flavor but a little bit less of the fat (you know, for you New Year&#8217;s Resolution-ers out there!). Start with a few fresh ingredients and break out the old cast iron skillet (my bestie Mary got me this one).<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li><span style=\"line-height: 15px;\">1 package boneless, skinless chicken tenders (or breasts, if you prefer)<\/span><\/li>\n<li>1 cup panko bread crumbs<\/li>\n<li>1\/2 cup grated parmesan cheese<\/li>\n<li>about 8 small slices of havarti cheese<\/li>\n<li>handful of fresh spinach<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 egg<\/li>\n<li>1\/2 cup flour<\/li>\n<li>salt &amp; pepper, to taste<\/li>\n<\/ul>\n<p><img decoding=\"async\" alt=\"DSC_0016\" src=\"http:\/\/farm9.static.flickr.com\/8049\/8381492277_fe69c8274a_b.jpg\" \/><\/p>\n<p>Mince spinach and garlic, and mix the two together in a small bowl. Place each chicken tender inside a plastic baggie and gently pound it flat with a meat mallet (don&#8217;t go overboard). Set aside. Place flour and salt in a shallow bowl, then egg in a separate bowl, and in the last bowl, mix the panko bread crumbs and parmesan cheese. Now comes the fun part!<\/p>\n<p>One at a time, take a piece of chicken, coat it in flour mixture, then dip in egg mixture, then place in bread crumbs. Place piece of havarti, then about 2 tsp of the spinach garlic mixture inside. Next, gently roll the chicken around the filling.<\/p>\n<p><img decoding=\"async\" alt=\"DSC_0021\" src=\"http:\/\/farm9.static.flickr.com\/8468\/8382575664_b6d94bafcc_b.jpg\" \/><\/p>\n<p>Stab with a toothpick to keep the tender together, and place in a lightly oiled skillet (you could also use any baking dish):<\/p>\n<p><img decoding=\"async\" alt=\"DSC_0023\" src=\"http:\/\/farm9.static.flickr.com\/8330\/8381492815_efb5156b3d_b.jpg\" \/><\/p>\n<p>Continue until all tenders are used:<\/p>\n<p><img decoding=\"async\" alt=\"DSC_0033\" src=\"http:\/\/farm9.static.flickr.com\/8044\/8382576134_2358a8f039_b.jpg\" \/><\/p>\n<p>You can either bake right away, or refrigerate until you are ready to use. I often make dinner in the morning or afternoon while the boys are at preschool and Emil sleeps, then I can do all the dishes, clean up, and later just throw it in the oven during the busiest time of day.<\/p>\n<p>When you are ready to cook, Preheat oven to 425. Bake chicken for 15 minutes, flip, and return to oven. Bake another 10 &#8211; 15 minutes, depending on how thick your chicken is.
