August represents the start of &#8220;feast month&#8221; for us, a month we celebrate a birthday exactly every 7 days for a month straight: starting with Oliver, then Emil, then Andrew, and finally Milo. So I wanted to kick off the month with a feast month recipe! This dessert (or breakfast, if you&#8217;re like us) is the perfect summer treat. It boasts juicy ripe peaches and raspberries bursting with tart and sweet flavors which pair perfectly with soft cake which caramelizes on the top&#8230; add fresh whipped cream if you&#8217;d like, but trust me- it doesn&#8217;t need it.<\/p>\n<p><em>Raspberry &amp; Peach Cobbler (makes two loaves &amp; serves 6)<\/em><\/p>\n<ul>\n<li><span style=\"line-height: 15px;\">1 pint fresh raspberries<\/span><\/li>\n<li>2 ripe peaches, peeled, pitted, and thinly sliced<\/li>\n<li>3 Tbsp sugar<\/li>\n<li>juice from one lemon<\/li>\n<li>1 stick butter<\/li>\n<li>1 cup sugar<\/li>\n<li>1 egg<\/li>\n<li>1 cup whole milk<\/li>\n<li>2 cups flour<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>1 tsp sea salt<\/li>\n<\/ul>\n<p>Preheat oven to 375. Butter two loaf pans. In a large bowl, toss the berries and peaches with the lemon juice and 3 Tbsp sugar and set aside. In another large bowl, beat together butter and 1 cup sugar until well blended. Add egg and continue mixing until light and fluffy. Whisk together flour, salt, and baking powder, then add to butter mixture, alternating with milk until a thick batter forms (do not over-beat).<\/p>\n<p>Turn about 3\/4 of the mixture into the two loaf pans. Using a slotted spoon, spoon the fruit mixture on top of the batter. Dollop the remaining batter on top of the fruit:<\/p>\n<p><a title=\"DSC_0007\" href=\"http:\/\/farm8.static.flickr.com\/7292\/9410378647_cf64722c4d.jpg\" rel=\"\"><img decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm8.staticflickr.com\/7292\/9410378647_cf64722c4d_b.jpg\" alt=\"DSC_0007\" \/><\/a><\/p>\n<p>Bake for about 45 minutes (or a little longer, but watch that it doesn&#8217;t dry out) until fruit is bubbly and top is golden brown.
