So to beat the food rut I enlisted the help of Andrew&#8217;s sister-in-law Annie, who is quite a creative (and good) cook. She sent this recipe our way- it is perfect for winter months: hardy, delicious, and easy on the budget. Plus, aside from the sausage, it is made up of ingredients you probably already have in your pantry.<\/p>\n<p><strong>Annie&#8217;s Sausage &amp; Beans<\/strong><\/p>\n<ul>\n<li><span style=\"line-height: 15px;\">2 Tbsp olive oil<\/span><\/li>\n<li>5 sausages (sweet, hot, or mild Italian- or use your favorite vegetarian version)<\/li>\n<li>5 cloves garlic, peeled &amp; sliced into biggish chunks<\/li>\n<li>1.5 lbs fresh diced tomatoes (or 2 14-ounce cans diced tomatoes when out of season)<\/li>\n<li>3 dried red hot peppers (or 1\/2 tsp dried red pepper flakes)<\/li>\n<li>2 (15-ounce) cans cannellini beans, drained and rinsed<\/li>\n<li>5 fresh bay leaves (or 2-3 dried)<\/li>\n<li>freshly ground pepper to taste<\/li>\n<\/ul>\n<p>Heat a large high-sided dutch oven over medium-high heat. Add olive oil. Once hot, add sausages and brown on all sides, about 8 minutes total. Transfer sausages to a plate and set aside. To the pan, add garlic and saut\u00e9 until soft and golden brown. With a wooden spoon, stir in the tomatoes and red pepper and season with pepper. Lower heat and simmer about 10 minutes, until the tomatoes have broken down to a sauce-like consistency.<\/p>\n<p>Slice sausages into small pieces and add (with any juices from the plate) to the sauce. Add beans and bay leaves. Stir well and simmer another 10 minutes.
