Yummy Stuff: Apple Pie with Crumble Topping

I apologize for the lack of DIY Fun this week. Truth be told, a low pressure weather front moved through our area earlier this week and brought storms and a nasty two-day-long migraine for me. Which results in a whole lot of lying around moaning and feeling sorry for myself and not very many creative ideas to do with the kids.

But yesterday I did muster up enough energy to bake this tasty apple pie from the last of our apple bounty! And, depending on your kid, this might be a fun enough activity to do with your little guy or girl. So, here goes!

Apple Pie with Crumble Topping

Ingredients

  • pie crust (I cheated and used prepared, but if you have the time and energy, this one looks absolutely amazing, don’t you think?)
  • 5 medium-sized tart apples, like Granny Smith (peeled, cored, and sliced thinly)
  • 1/2 cup white sugar
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 2 Tbsp flour
  • 1 Tbsp lemon juice
  • 1 Tbsp corn starch

For the topping

  • 2 Tbsp brown sugar
  • 1/2 cup butter (1 stick)
  • 1/4 to 1/2 cup flour
  • 1/2 cup rolled oats
  • 2 Tbsp chopped pecans
  • 1/2 tsp cinnamon

In a medium saucepan, toss the apples with lemon juice, sugar, spices, corn starch, and flour. Cook on low for 10 – 15 minutes, until apples are tender. Side note: while we were cooking the filling, the smell wafted out the open back door and… surprise! Invited a hungry bee into our house! I caught him and released him near some flowers at the back of our yard…DSC_0015

Pour into (blind-baked) pie crust.DSC_0025

Using a fork or pastry cutter, mash butter with flour, oats, brown sugar, cinnamon, and pecans. When crumbly, sprinkle on top of pie.

Place pie on tray (only if it looks like it might spill over). Bake at 350 for 40 minutes, covering crust edges with foil about 20 minutes in.

Serve warm with good vanilla ice cream! Happy baking!

  1. This looks divine! I’m a store-bought crust gal myself as my baking skills aren’t quite ready to master the homemade variety. My MIL, however, makes a fabulous one from scratch but it calls for lard…. and the what am I going to do with all that lard after making a pie crust or two?!

    Well … Maybe I don’t … Because I’d probably weigh a lot more if I was consuming pieces of apple pie every night!! 😉

  3. The pie looks dee-lish! Been meaning to tell you…I’ve read that a lack of magnesium can contribute to migraines. I started taking a supplement a couple of months back, and maybe it’s in my head, but I swear it has made a difference. Worth a try!

  4. There’s nothing quite like apple pie- your’s looks awesome and thanks so much for the pie crust love 🙂 I’m actually impressed that your store bought crust looks legit. I’ve only ever seen it in the metal tin with the pressed edge type deal.

    Hope you are feeling better! Being sick is the worst and it always makes me realize that I should be grateful every moment that I am healthy – pain will put things into perspective like that.

  5. Sorry to hear you had a 2-day-long bout with a migraine. Awful! I don’t know how you even function at all. I can’t remember if I said this before on here, but I used to get migraines at least once a week before I stopped eating gluten, and they were absolutely crippling. The television was on all day and was my babysitter for poor little Julian. I hope the magnesium thing works for you!

    And DANG. That pie looks crazy awesome. You have inspired me to get baking this weekend.
