The perfect hard-boiled egg: pasture or backyard eggs + cold water in a pot + high heat until slow boil + 10 minutes + ice bath = heaven.

With our backyard eggs, we put them in the steamer basket in our pot, cover, and steam for twelve minutes. (The twelve minutes starts when the water begins steaming.) They are delicious and insanely easy to peel.
I am trying it as I type! I always bring them to a boil and then turn them off immediately and let them sit. Always down for a new method, we love our eggs.
